
4 Sugar-free Snack Recipes for Those with Diabetes

1. Apple pie energy balls
Ingredients – 4 Medjool dates, 10 prunes, 1 cup walnuts, ¾ rolled oats, and 1 apple
Method – Ensure that the dates and prunes are pitted. Chop them and add them to a food processor along with the walnuts and ½ cup of oats. Pulse for a couple of minutes till all the ingredients are chopped finely. Core and grate the apple with the skin and add it to the mixture. Then, add the remaining oats and mix by hand. After 30-40 minutes, take it out of the fridge and roll the mixture into small balls. This delicious sugar-free snack can be stored in an airtight container in the refrigerator for 4-5 days.
2. Apple and raspberry fruit leather
Ingredients – 4-5 apples (peeled and chopped), ½ cup raspberries, and water
Method – Preheat the oven to 175°F. Put the ingredients into a medium-covered pan and place it on medium-low heat. Stir and cook for about 15 minutes till the fruit is soft. Using a blender, make a smooth paste. Pour on a baking sheet and spread till ¼ inch thick, and bake for 2-3 hours. Allow it to remain in the hot oven with the door closed for another 3-4 hours. Once cool, cut into strips and wrap in non-stick paper. Store this snack at room temperature.
3. Roasted trail mix
Ingredients – pecans, pumpkin seeds, almonds, raisins, coconut flakes, coconut or canola oil, maple syrup or honey, sea salt, and vanilla
Method – Preheat the oven to 350°F. Mix all the ingredients in a bowl, then spread on a baking sheet and put in the oven for about 15 minutes. Cool it and store it in an airtight container to enjoy it on the go.
4. Almond flour crackers
Ingredients – ¾ cup almond flour, ½ grated parmesan cheese, 1 large egg, ¼ teaspoon salt, and ¼ pepper
Method – Mix all the dry ingredients and add 2/3 of the beaten egg to form a dough. Divide this mixture into four balls and roll them into 1/8 inch thick sheets. Then, cut into 16-20 cracker shapes. Brush with the remaining beaten egg and bake for 20 minutes.
